One of my saving graces was a Cinnamon Bun Muffins (that I turned into a loaf)
Cinnamon Topping:
1/2 tbsp xylitol
1 tbsp cinnamon
1 tbsp grapeseed oil
- To make cinnamon topping, combine all ingredients in a small bowl
(if you feel the need to increase the amount xylitol- DO IT!!!)
- Set aside.
1 Cup blanched almond flour
2 tbsp coconut flour
1/2 tsp baking soda
1/4 tsp celtic sea salt
1/4 cup grapeseed oil
1/4 cup xylitol
3 eggs
1tbsp vanilla
- Combine first four ingredients in a medium bowl.
- In a larger bowl mix the remaining ingredience.
- Blend dry ingredients into wet and scoop 1/4 cup into a lined muffin cup, or pour into a parchment lined loaf pan.
- Spoon topping onto muffins/ or on top of loaf.
- Bake muffins for 8-12 min at 350 degrees.
Hey! Maybe I missed it in an earlier post, but can you talk about what xylitol is? It seems to be in all your "saving grace" recipes. Sure, I could look it up, but that takes the fun out of asking you to comment.
ReplyDelete"Saving grace" is right... when it comes to NO sugar, it's important to know what works. Xylatol is actually a sugar substitute that doesn't spike blood sugar levels like sugar does, and it isn't made from chemicals like other sweeteners. Oddly enough it is made from birch tree (or at least the stuff i buy is) and can usually be found at a local nutrition or natural food store... Are you thinking of joining me on this crazy challenge?!?!?!
